Tuna Wraps & Salad

If I am not making a bowl I am usually wrapping something, so what better dish than Tuna Wraps & Salad I ask you? All it takes is the time to assemble, just make sure you have the ingredients handy, that’s the key!

When the weather starts to turn a bit warmer I naturally gravitate towards crispy fresh veg and less cooking. This meal is a go-to favorite for my family and I know it will be with yours.

Tuna Wraps

Siete cassava & chia wraps ( you certainly can use any leafy green as the wrap as well)

Tuna

Radish Sprouts

Red Onion

The Tuna

2 cans Tuna (get a good brand here, I buy Safe Catch)

1 -2 Tbls Mayo – depending on how creamy you like it (I also buy Chosen Foods mayo)

1 Tbls Brown Mustard – I prefer Eden Foods brown as it is made with ACV and zero sugar

Handful Fresh Chopped Parsley

1/2 cup Capers

S&P

Wrap It

Next slightly heat your wraps in a skillet, this will make them easier to wrap. Remove and assemble with the above ingredients and wrap. I usually cut mine in half.

Optional: You can also take your rolled tuna wraps and place back in the heated skillet with some ghee and crisp up. Oh so yummy!! Like a Tuna Melt but without the cheese, but I promise you won’t miss a thing.

Salad

Mix of baby greens & some romaine for crunch

Celery

Radish

Cucumber

Avocado

Orange Pepper

Egg (here’s how to make the perfect soft boiled egg)

Raw Pecans (you can soak these overnight to sprout them as well)

EVOO

A squeeze of fresh lemon juice

Arrange all ingredients in a pretty bowl, top with EVOO and lemon. Serve up alongside the Tuna Wraps. ENJOY:)
