California Roll Bowl

California Roll Bowl

Ever eaten a California Roll? It’s made with imitation crab meat, but you won’t find that here in my California Roll Bowl, real crab meat baby! I was actually craving sushi and I had a tub of fresh crab meat I needed to use so this California Roll Bowl was born and my hubby sure is glad about it.

Ingredients

3 cups steamed cauliflower rice

4 tbls coconut vinegar

1/4 cup homemade mayo or Chosen Foods mayo

1 1/2 tbls clean sriracha (I used Yellow Bird)

1/4 cup coconut aminos

12 oz lump crab meat

1 cup diced cucumber

1/2 cup chopped radish

2-3 nori sheets (I use Seasnax)

1 avocado chopped

2-3 cups fresh baby spinach

Sesame seeds to top

Kimchi

How To

Place spinach into bowls. Set aside.

Steam your cauliflower rice first. Rinse with cold water, drain and set aside to cool. Once cooled stir in 3 tbls coconut vinegar and divide into bowls.

Make your sriracha mayo by mixing the mayo and sriracha, thin with water if desired. Set aside.

In a small bowl mix together the coconut aminos and remaining 1 tbls coconut vinegar. Set aside.

In a large mixing bowl gently toss the crab, cucumber, radish, nori and avocado together. Spoon over rice bowls. Pour coconut amino/vinegar mixture over each. Last top with drizzle of sriracha mayo and sesame seeds.

Add kimchi

ENJOY!!
