Have you ever thought of making a sweet potato into toast before? Well, it is delicious and you won’t soon forget it once you try it. I personally adore Sweet Potato Toast with smashed avocado, match made in heaven.
Now, if you are trying to eat keto, do not eat sweet potatoes right now, save this recipe for when you can add them in 1-2 times a month.
Sweet Potato Toast
Slice your raw sweet potato about 1/4 inch thick lengthwise. You can toast in your toaster by placing slices in and running through about 3-4 cycles until done. I generally use this method. Top with ghee(this is one of my favs) when it comes out and sprinkle with s&p.
Or you can toast in your oven on 375 for about 15 mins and then broil until browned. Top with ghee(this is another fav) and s&p.
You can top with anything from nut butter, eggs or fruit, I love smashed avocado with a drizzle of EVOO and a few chili flakes.
Serve up with a few crispy edge eggs and a smoothie, you will be good to go until dinner!
