Quick Caesar Dressing is super fast and easy to make! I do not measure anything, I just eyeball it and place in my blender container. Very easy to double this recipe as well. I only make what I am going to eat that day as it has raw egg in it. Although it will last in the fridge for 1-2 days. I do recommend pasture raised organic eggs of course, the dark nutrient dense yolks give this dressing a pretty color.
1 egg yolk
Juice from 1 lemon
2 tsp anchovy paste
1 clove garlic
pinch salt and pepper
2/3 cup olive oil
Nutritional yeast (optional) gives more of a cheesy taste making it perfect for all kinds of salads you wish to have a creamy dressing for.
Add all ingredients into a blender cup or use an immersion blender.
