Creamy Cauliflower Soup
I made this creamy cauliflower soup one night when I wanted to do anything but cook. I knew I needed to make something good for me but really did not want to put much effort in, and of course it needed to be yummy.
Ingredients:
1 head cauliflower
3-4 stalks celery
1/2 large yellow onion
4 cloves garlic
2 quarts homemade chicken broth
1 can full fat coconut milk
Juice from 1/2 lemon
S&P
Dried chilli flakes
8-10 swiss chard leaves
I chopped the celery, onion, cauliflower and garlic up and sauteed in 2 Tbsp ghee in a stock pot for several minutes. Seasoned and added the lemon juice.
Next I added the broth and brought to a simmer then added the milk and a few minutes later I used my immersion blender to cream completely.
Taste for seasoning adjustment.
Place chopped chard in your bowl and pour hot soup over.
Tip: crumbled bacon on top would be excellent or ham tid bits
