Old classic Chicken Caesar Salad made clean and dairy free! Full of flavor you will never miss a thing. I like to pack as much nutrition in as I can, so putting a slight twist on things is what I like to do. Instead of just using romaine lettuce here, I added in bok choy! Adds a super nice unexpected flavor and crunch that goes really well with the garlic bite in this Caesar Dressing.
This chicken was made on the fly one night in my Instant Pot from frozen in about 10 mins. Heres what I did to make this yummy chicken.
Chicken Caesar Salad
ingredients
2 chicken breasts (frozen or not)
1 cup Bubbies pickle juice
Splash bone broth
How To
Place ingredients in Instant Pot, turn pressure to high, make sure vent is closed, set timer for 10 mins. When done, let release pressure naturally, about 5 mins. While thats happening, heat a cast iron skillet over med/hot heat with bacon grease (or ghee). Add chicken and brown, kinda breaking apart as you go. Remove and place on a bed of romaine and bok choy. Drizzle with Caesar Dressing.
Tip – would be great with soft boiled egg added, or even sourdough croutons if you can eat them!
