This Roasted Red Pepper Cauliflower Hummus is packed full of flavor and only gets better after a few days in the fridge. So go ahead, whip up a batch for your weekly meal prep or day before a party. Roasted Red Pepper Cauliflower Hummus
2 cups roasted cauliflower florets
2 Fire Roasted Sweet Red Peppers (I buy them in a jar, you can roast along with your cauliflower as well)
3 Tbls EVOO
2 Tbls Tahini
1-2 Tbls lemon juice (I like the tang of 2)
1-2 Tbls water
1 clove garlic
Pinch dried chili flakes
Combine all ingredients in blender EXCEPT water. After blended add as much water as needed to desired consistency. Taste for flavor adjustments.
