Living Nachos

I call these Living Nachos because they are full of raw living foods, simple right? I might need to warn you, these may just be the best healthy nachos you have ever eaten. Living Nachos will leave you feeling satisfied and like you got to indulge, almost sinful. Take note, these nachos are dairy free, gluten free, grain free and can be made meat free if you wish!

Easy to make and fun to eat, make em!

Living Nachos

Ingredients

1 bag of Siete chips (any flavor)

1 lb ground grass fed beef OR chicken shreds (you can even buy a rotisserie chicken)

2 cups shredded romaine and mix with raw cabbage shreds

1/2 cup black olives sliced

1/2 red onion chopped

1/2 cup red or orange pepper chopped

1 avocado chopped

1/2 cup kimchi

Siete cashew cheese

Banana peppers and or jalapenos

Cilantro chopped

Salsa (we like Mateos)

Garlic & Onion powder

S&P

Smoked Paprika

HOW TO

You can grab a big platter or line a cookie sheet with parchment paper. Dump bag of chips onto pan. Layer your ingredients starting with the shredded romaine/cabbage mix, this keeps the chips from getting soggy.

Cook your beef if using that, in a skillet with seasonings, until browned. You can mix in a little salsa too. If using chicken, I usually shred and heat in a pan with same seasonings. Layer meat on top of the greens.

Continue to add all other ingredients ending with the kimchi and cilantro last. There is no exact order, whatever makes you happy! Not to mention, they arent going to around long anyway, because you are basically going to inhale these.

My hubby and I will eat this for a meal sometimes. Can be served as an appetizer for 4 as well.

Feel free to omit or add items you love, it really is quite versatile.
