This meatless dinner salad is one of my go-to’s. If you find your fridge void of meat or maybe you just do not feel like eating meat, this is a great way to prepare a dish in a hurry that has lots of nutrients and good fats to keep your body happy.
How To Make:
Start with a bed of any Leafy Green
Saute onions, mushrooms and garlic in coconut oil or ghee with garlic and onion powder, s&p and chili flakes.
Chop some fresh asparagus into thirds and toss in saute pan for the last 2 mins of cooking onions and mushrooms.
Pour over greens.
Use the same pan and make an over easy egg.
Serve with an avocado.
Drizzle whole dish with olive oil, squeeze of lemon and S&P sprinkle.
