You’re going to keep this Pumped Up Tuna Salad ready at a moments notice! Maybe your family does not cook, maybe you are down for the count? No excuse here, anything goes! What’s in fridge and get making the rainbow!
Pumped Up Tuna Salad
2 cans Tuna or 1 filet flaked
Red Onion chopped
Dill Pickles chopped
1/2 Lemon squeezed
Drizzle Extra Virgin Olive Oil
Garlic & Onion Powder
Mix all the above ingredients together.
Place your leafy green of choice in a bowl, this picture features kale. Then add a healthy fat, here we have avocado. Add in some more colors to make a rainbow, here we have radish and orange peppers. Top off with a little more lemon juice and olive oil, S&P and you are ready to eat!
Additions: raw nuts or seeds would make a nice topping here as well as chopped red pepper as a nice sweetness
