Don’t worry, no rice was actually used in the making of this Fried Rice! Instead I use cauliflower rice. Easy enough to make I am not making a separate recipe. Simply take a head of raw cauliflower and run through a chopper until the size of rice. Bam, cauliflower rice! Rice just tastes like starchy glue to me compared to this deliciousness. This cauliflower rice has those traditional and authentic flavors you love and its good for you.
Fried Rice
Ingredients
1 head of raw cauliflower (riced, see paragraph above)
1 small carrot diced
2 ribs celery chopped
2 cloves garlic chopped
2 inches fresh ginger grated
2-3 Green onions sliced
1/4 cup chopped red onion
Handful fresh cilantro chopped
5-10 dashes fish sauce (I use the 10 because I love fish sauce)
2 Tbls Coconut Aminos
1 Tbls Coconut Oil
2 tsp toasted sesame oil (or regular sesame oil if thats what you have)
Pinch Dried Chili Flakes
S & P
Garlic Powder to Taste (I just add a shake over the top when cooking)
2 Eggs
1/4-1/2 cup
1/4-1/2 cup Chicken Broth (can be optional)
Lime wedges
Additions: Shrimp, chicken, broccoli
How To
First rice your cauliflower and set aside. Next add your coconut oil to your cast iron skillet over medium heat. Throw in your red onion, garlic, celery and carrot, saute for a few minutes. Next add your cauliflower rice and give a good stir to mix. Then add your coconut aminos, fish sauce, sesame oil, chili flakes, S & P and garlic powder. Let cook for several minutes stirring several times. Then add your ginger, green onion and give a stir. Clear a hole in the middle of your skillet by pushing the rice to the edges, crack your eggs into it. Give them a good stir and cook, then mix into rice. Here is where you can add in the broth if your rice seems to be sticking or looks dry. Last add your cilantro and check for seasoning adjustments. Serve with a lime wedge if you have it, to squeeze over top!
You can totally serve as is and it is 100% delicious! Or you can add in a meat like shrimp, pork or chicken.
I also make a Chinese hot mustard type sauce that is off the hook drizzled on top if you like hot mustard!
This makes a lot of fried rice and this dish keeps well in the fridge for the whole week. You can add it to salads and other dishes as a side. Super handy to have hanging around. Oh, and good cold spooned right outa the fridge into your face:)
