One of the only things I can still miss from my old lifestyle of eating is bread! Since discovering the ease of cooking with Cassava Flour, those days of longing for a warm piece of bread are over! Swaps out even for any recipe that uses flour, so start experimenting! This recipe is the basic recipe on the back of the Cassava Flour bag, I just spiced it up a bit to my taste.
Cassava Hot Dog Wrap
Ingredients
Uncured beef hotdogs
Shredded red & green cabbage (I buy a pre made mix from Whole Foods, includes carrots)
Avocado
Red Onion
Tomato
1 Tbls Mayo (I make my own or I use Chosen Foods)
1 Tbls Mustard (I like Eden foods as they use apple cider vinegar in it and gives it a nice bite)
1 cup Cassava Flour
3/4 cup Water
1/4 tsp Himalayan Salt
2 Tbls Extra Virgin Olive Oil
Garlic Powder
Onion Powder
Smoky Paprika
How To
Mix the cassava flour, salt, garlic, onion and paprika in a bowl. Then add the EVOO and water. Knead into a dough. It shouldn’t be really wet but also not dry and crumbly, somewhere in the middle.
Heat your dry cast iron skillet on medium heat. Go ahead and throw your hot dogs in the hot pan and push to the sides. Divide your dough into 5-6 balls. Press out into a round tortilla shape on parchment paper. When pan is hot, add pressed out dough and cook for about 1 minute and flip. Should be slightly bowned. Cook on the other side for another minute or two and remove. Let cool a minute before wrapping. Remove dogs.
For the Slaw
I mixed about 1 cup of the shredded cabbage mix with Mayo and Mustard. Thats it!
Assemble your Wrap
Layer your slaw, dog, sliced avocado, tomatoes and onion slices. Serve up with a big green salad and your done. ENJOY:)
