Pork Cabbage Rolls
These look fancy and are oh so delicious but I promise they are fast to make!
Ingredients:
Cabbage – any kind with big leaves
Pork -1 lb (you can use any ground meat and or mixture)
1 yellow Onion or Scallions – chopped
1 Bell Pepper – any color and mixture of colors
1 package Mushrooms -chopped
1 head Cauliflower – riced
2 stalks Celery – chopped
Kale – chopped
Bunch of Cilantro – chopped
3-5 cloves Garlic – chopped
1 inch Fresh Ginger or Juice
Fresh Lemon or Lime Juice
Few good dashes – Coconut Vinegar
1/4 ish – Coconut Aminos
1 tsp ish – Fish Sauce
Drizzle – Sesame Oil
Pinch or more – Chili Flakes

I have a handy little chopper I use to run all the ingredients through so they are all the same size for the most part. In a large bowl mix all ingredients except cabbage leaves.
Spoon into cabbage leaves and roll up taking care not to overfill or it won’t stay closed. Place seam side down. Use a pan that you can fill the whole bottom with rolls, they cook nicely and stay together this way.
I make a little drizzle for the top made of tamarind paste (a sour fruit), coconut aminos, splash of coconut vinegar.
Bake 350 for an hour or so. They turn out like little steamed dumplings inside.
I have made this without the cauliflower and replaced with leftover red cabbage salad and it was just as YUM.
