Tomato Soup
Ingredients:
1 qt jarred Tomatos
1 qt Homemade broth-Chicken or Beef
1 can full fat Coconut Milk
1 Red Pepper-chopped
1 med Onion-chopped
2 stalks Celery
3 cloves Garlic chopped
1 Bay leaf
S&P
Dried Chili Flakes-to taste, I kinda use a lot
1/2 Lemon juiced
1 tbls Tomato paste
1 tsp Anchovie paste (optional)
Splash Apple Cider Vinegar
Dried Italian seasoning
1 tsp Turmeric
Shake of Celery Seed
2 tbls Ghee
In a large stock pot melt your ghee over med heat and add onion, celery, peppers and then garlic.
Season with S&P and maybe a bit of garlic and onion powder.
Next add your tomatos and broth, bring up to a simmer.
Add all seasonings and cover for 20 mins.
Use an immersion blender and make nice and smooth.
Last add in coconut milk and adjust seasoning.

Serve with fresh basil if you have! Yum
I also have served by stirring in kale or spinach right before serving, or you can do the classic soup & salad.
