Perfectly yum, and perfectly simple is this Egg Drop Soup! So great for the belly and is a go-to when I do not feel well, along with my Kombucha Sorbet. I bet you have all the ingredients in your house right now. The collagen is what helps thicken it up like regular egg drop soup, which is traditionally thickened with corn starch. This soup is fast too, only takes a few minutes. Not kidding.
Let’s get to it.
Egg Drop Soup
Ingredients
32oz Chicken Bone Broth
2-3 Eggs beaten
1 Tbls Coconut Aminos
1 tsp ground ginger (powdered or fresh)
1 tsp toasted sesame oil
3-4 scoops unflavored powdered collagen (currently I am using Collagen for Her)
S&P
Green Onions
Optional – cubed avocado (I love it in this soup)
How To
Pour the broth into a saucepan over med-high heat. Add aminos, ginger, sesame oil, bring to a simmer. Whisk in your collagen slowly until all dissolved.
Take your beaten eggs and slowly stream in while stirring in the same direction with the other hand. Faster stir makes smaller egg stands, slower stir makes for bigger egg strands. Remove from heat.
Serve with sliced avocado (if desired) and sliced green onions. That’s it!
