Pizza
I put off attempting to make pizza until every thought of pizza had left my mind. I wanted to be clear and ready to not judge too harshly. I amazed myself. This cauliflower pizza crust is amazing and I will be making many times over. Family approved.
Crust Ingredients:
1 Head of Cauliflower-Riced
2-3 Eggs (depending on your size cauliflower head)
2-3 Garlic Cloves-I run through my chopper with the cauliflower
S&P
1 tsp Oregano (or Italian seasonings)
Mix all ingredients in a bowl.
Line a sheet pan with parchment paper.
Spread out your mixture to about 1/3 inch, any thicker it won’t crisp up enough.
Place in 400-degree oven for an hour. Yes an hour.
Toppings:
Sauce-I like a small amount of fresh tomato sauce but you can get creative and do a pesto or garlic white sauce
I like fresh raw stuff like:
Shredded Brussels
Tomato Slices
Fresh Basil
Artichoke
Red Onion
Jalepeno
Mushrooms
Spinach
Arugula
Pile your toppings on and bake again for a few minutes until everything looks warmed and ready to chomp!
Pizza, welcome back to my life. I missed you!
