Buddha Bowls are traditionally all vegetarian, however I do not follow any rule in eating minus REAL WHOLE FOODS that work for my body. I adore making bowls of food in beautiful color combos, textures and flavors. Super easy to assemble and so much fun to eat. This uncured Kielbasa Buddha Bowl checks off all the boxes for my taste buds and visually. I mean who wouldn’t want to eat this? Just make sure you get uncured, clean kielbasa with no preservatives, additives or sugars.
Kielbasa Buddha Bowl
ingredients
*makes 2 bowls
3-4 Kielbasa Links
4 cups greens (baby spinach used here)
2 Cups Roasted Broccoli (would be great with roasted brussels too)
2 small carrots (red & orange used here, you could use a red beet as well)
1 small zucchini
1/2 cup sauerkraut (dill pickle from Farmhouse Culture used here, soooo yum)
1/4 cup bone broth
Dressing
EVOO & Lemon Juice OR Mustard Vinaigrette
How To
Slice and brown your kielbasa in an iron skillet, use ghee if needed. Once browned on both sides add the bone broth and let cook down for just a few minutes. Remove from heat.
Grab 2 bowls and add 2 cups of greens to each bowl. Spiralize your carrots and zucchini and divide between the 2 bowls. Add your roasted veggies, 1/4 cup kraut to each bowl, and the kielbasa. Last drizzle with dressing.
