Thai Coconut Soup
This Thai Coconut Soup is super easy and super fast to make. Only 3 ingredients! Perfect in a big bowl or by the mug full. Top with sliced green onions if you want to be super fancy.
Great way to get your healing bone broth and good fats in.
Ingredients:
Thai Red or Green Curry Paste
Full fat Coconut Milk
Broth – Chicken or Beef
Optional – sliced Green Onions
Heat equal parts milk and broth no matter the size batch you are making. I usually make two mug fulls at a time. It takes 1-2 heaping spoonfuls of the curry paste. This is totally a taste preference.
Heat through and pour into mugs, top with sliced green onions if you want.
