Sausage & Potato Soup

It is September and that means soup season to me! I love making soup for many reasons….its fast, packed full of nutrition and flavor, comforting and easy to make. I threw this Sausage & Potato soup together this morning in a matter of minutes and let simmer for a few hours until we served it up. So delicious, creamy and satisfying this soup is also packed full of nutrition from the bone broth to kale, your body will thank you!  Feel free to make any soup your own, easy to swap out ingredients and replace with items you have on hand and like. You will notice many of soups include full fat coconut milk and bone broth, both are essential to a healthy lifestyle and just so darn yummy together! The coconut milk is a good fat that helps you feel fuller longer and allows for slow absorption of naturally occurring sugar found in some foods, which means no spike and crash. Bone broth is full of collagen which is essential to the human body and not found in many of our foods today. Great for hair, skin, nails, and joints, this stuff truly is a must have for everyone in my opinion….which is why I love soup season sooooo much!

Sausage & Potato Soup Ingredients

1 lb Italian Sausage

1 large onion chopped

3 garlic cloves chopped

1 package mushrooms quartered

Kale – several handfuls

3 small to medium potatoes (or celery root if you do not want to eat potatoes)

1/2 lemon juiced

1 quart chicken bone broth

1 can full fat coconut milk

S&P to taste ( I personally like a lot of pepper)

2 TBLS EVOO

Pinch Dried Chili Flakes

 

HOW TO:

Add EVOO to soup pot over medium heat, add onion, garlic, mushroom, and S&P. Cook until fragrant and onions start to become translucent. Then add the sausage and dried chili flakes. Stir several times until browned and then add the broth and lemon juice. Come back to heat and add potatoes and coconut milk. Adjust seasoning, turn down to simmer, cover and let go until potatoes are fork soft. Right before serving add your kale and check taste one last time:)
