Roasted Cauliflower Soup

Yes, I wrote another cauliflower soup recipe, my love is real. Oh, how I have fallen in love with cauliflower over the last year and will eat it almost anyway anyday! Roasted cauliflower soup is top of the list as far as my recipes go. I think even my family would agree, as this soup is so creamy and delicious it really is hard t0 pass up. This soup pairs perfectly with any meat or even making a nice dish all by itself.

Roasted Cauliflower Soup

1 head organic cauliflower

3- cloves organic garlic

Bone broth – just enough to blend (I prefer chicken)

2 Tbls full fat coconut milk

1-2 Tbls ghee

2 Tbls nutritional yeast

1/2 juice from a lemon

S&P to taste

Extra: I like Primal Palate Garlic & Herb in here

Optional: Chopped Greens and a Drizzle of extra virgin olive oil and hot sauce

Cut up your head of cauliflower, drizzle with olive oil, S&P, add the whole garlic cloves and roast on 420 for 20 mins. In a saucepan add all ingredients minus the drizzle of oil and hot sauce, heat and then add the cauliflower. Adjust the liquids accordingly, it will vary depending on the size of your cauliflower head. I use an immersion blender to blend until perfectly creamy, leaving a few chunks. You can add any chopped green here and Top with a swirl of olive oil and hot sauce if desired.
