Mushroom Meatballs

These Mushroom Meatballs are so meaty, moist and Yummy! I have tried my whole life to make meatballs as delicious as my Italian grandmother. I finally gave up. I made my own meatballs and am quite pleased with it I must say. I have a basic Meatball Recipe as well that I make almost once a week and use in sauces and in soups.

Mushroom Meatballs

Ingredients:

2 lbs grass-fed Ground Beef

1 package organic Mushrooms (any variety)

1 medium organic Onion

Bunch of fresh organic Parsley

2-3 cloves organic Garlic

2 Eggs

Juice from 1/2 organic Lemon

S&P

Pinch Chili flakes

How To

*preheat oven to 375

I run the mushrooms, onion, garlic, and parsley through my little chopper and dump into a bowl.

Add the beef, eggs, and seasonings. Mix well by hand.

Roll into 1 inch balls and place on a parchment lined cookie sheet.

Cook in the oven on 375 for about 20 minutes turning halfway.

There is this glorious thing that happens when it cooks, all the lovely fat and juices start to come out, do not dump those while cooking! Let the meatballs keep cooking and the juices will began to concentrate and make the most delicious brown bits that are connected to the meatballs!!

You can serve these balls as is, or with any sauce you wish.

Tip: You may want to make a double batch if you have a large family as I never seem to have enough!
