Roasted Cauliflower Hash Recipe

 Roasted Cauliflower Hash

I am always trying to make new cauliflower recipes as my hubby and I love it so. This little roasted cauliflower hash diddy happened out of the blue, like most of my recipes, and is an absolute winner! My entire family loved it, so it is a keeper for sure. It was super easy to make, with very little effort and was bursting with garlic and lemon flavor. Please make this, you wont regret it.

Ingredients:

1 head of organic cauliflower

1/2 organic lemon sliced

4 organic garlic cloves

4 Tbls grass fed ghee

1-2 Tbls nutritional yeast

S&P

Oven 425

Line a baking sheet with parchment paper, makes clean up a breeze. Chop your head of cauliflower into pieces and place on the baking sheet. Add the peeled garlic, I did not chop but you can if you want. Then use 2 Tbls of the ghee to rub on all of the cauliflower pieces and then sprinkle with S&P. Slice the lemon and place on top of the cauliflower. Place in heated oven and roast for 20-30 minutes or until nice and browned.

Remove from oven and transfer the cauliflower and garlic to a mixing bowl with the remaining 2 Tbls ghee. I use a small hand mixer to basically “shred” the cauliflower, not mash. It looks like crab meat when done. Next take your lemon slices and carefully place on top of cauliflower (it’s fragile after being roasted) and use a fork to push out the inside leaving just a lemon ring, which you can remove. Add the yeast and give a good mix and adjust any S&P. ENJOY!
