Beet & Cabbage Salad
Ok, I have not been a fan of beets my entire life, mainly because they were so sweet, mushy and bit too earthy for me. NOW, I love eating them raw so much! So here is one recipe I think you may like. I balance the beet with equal parts green cabbage and add the bite of a green onion. The tangy mustard dressing just balances everything out! P.S. don’t forget beets make a bloody mess:)
Ingredients
1 cup shredded beets
1 cup shredded green cabbage
2-13 green onions sliced
1/3 cup fresh chopped parsley
2 tsp dijon mustard
1 1/2 Tbls EVOO
2 1/2 Tbls Coconut Vinegar
S&P
Raw Walnuts to top
I run the cabbage then the beets through my small chopper and toss in a bowl. Next, slice the green onions and chop the parsley, add to the bowl.
For the dressing use a glass jar and add the rest of the ingredients, minus the nuts, and shake. Pour over mixture and toss. Top with raw nuts just before serving!
