Who doesn’t love tacos, well honestly they were never my fav until I starting making this Taco Salad Jar!! Not only is it beautiful to look at in the glass jar everytime you open the fridge, its freaking yumalicious. Pro Tip: make sure you use canning jars (I use Ball) so you can immerse the bottom portion of this Taco Jar Meal in a hot bath to warm the meat portion. Brilliant huh? Even when traveing, I have a “go bag” that contains a hot plate and a small pot, so all I have to do is pack my cooler witha few Jar Meals and my go bag and I am eating like a queen anywhere I go!
Taco Jar Salad
Makes 2 1 qt Jars
beef ingredients
1 lb ground grass fed beef
3 cloves galic minced
1 4oz can diced green chiles (can omit if you don’t like spicey)
Guacamole ingredients
1 avocado mashed
1/2 lime juiced
1 tabls mayo or evoo
Sprinkle s&p
Shake of garlic & onion
Dash of hot sauce
Pinch of dried chili flakes
Other ingredients
2 cups chopped romaine
1/2 cup red onion sliced
2/3 cup red pepper chopped
20 med black olives
2/3 cup chopped cilantro
1/2 cup shredded red cabbage
1 cup salsa
1 cup roasted spaghetti squash
2 tbls Kite Hill plain nut cheez (optional)
2 lime wedges
How To
Brown your beef in 1 tbls ghee or coconut oil with the garlic, half way through add taco seasoning and chiles. Finish cooking and set aside.
Prepare your guac in a small bowl and set aside.
Grab your 2 one qt glass jars and layer bottom to top:
1/2 cup salsa in each jar
8oz meat in each jar
1/2 cup spaghetti squash in each
1 tbls kite hill cheez in each
1/2 the guac in each
red pepper
10 olives each
Red onion
Red cabbage
Romaine Cilantro
Lime wedge
Seal tight. When ready to eat, heat a few inches of water on the stove (enough to cover up to spaghetti squash in jar), place Taco Jar Meal in the water bath and let heat for 5-10 minutes.
Pour out into a bowl, give a stir, squeeze of lime and ENJOY!!!
Also really good with Siete Chips if you have.
