Egg Roll Jar Meal

So you know that delicious umami flavor that comes from biting into a crispy egg roll? Well, this Egg Roll Jar Meal has all that flavor without all the grease, gluten, soy, sugar and preservatives! Packed full of nutrients and can be made with pork sausage or shrimp.

I make in batches of 2 1 qt mason jars and they last in the fridge up to 4 days. Super easy to warm the bottom layer in a bath of hot water on the stove. May seem like a lot of ingredients, but these are items I typically have in my house at all times, so once you stock them, you will see you can use them in many of my other dishes.

Egg Roll Jar Meal

Meat mixture ingredients

1 tbls coconut oil

1 small carrot

1 lb pork sausage or shrimp

1/4 tsp mushroom powder

Pinch black pepper

Pinch dried chili flakes

Few dashes fish sauce (this is your salt)

1 tsp sesame oil

Sauce ingredients

3 tbls coconut aminos

2 tbls rice wine vinegar

1 tbls + 1 tsp toasted sesame oil

1/2 ginger juice or grate 1 tsp fresh ginger

1/2 tsp fish sauce

Pinch black pepper

3 Cloves chopped garlic

Pinch dried chili flakes

Jar ingredients

2 stalks celery chopped

1 small carrot chopped

1/2 shitake mushrooms slices

1 cup shredded cabbage

2 cups chopped bok choy

2 green onions sliced

How To:

First make your meat mixture – add the oil and chopped carrot to a pan over medium heat and saute a few. Next add the sausage and rest of the ingredients and cook until browned. Test for test adjustments. Remember, you will be making the sauce next which brings lots of flavor. Set aside.

Next make your sauce by adding all the ingredients to a small jar, seal tight, and give a good shke. Set aside.

Next chop all the jar ingredients.

You are now ready to layer your 2 jars! In the following order split the ingredients in half.

Sauce

Meat

celery

carrot

Mushrooms

Cabbage

Bok Choy

Green onions

They should look something like this. Seal tight. Should last in the fridge for 4-5 days. When ready to eat, remove lid, place jar in a small sauce pan with water covering the meat mixture. Heat until warmed through, about 10 mins. Dump jar into a large bowl, give a stir and ENJOY!!!

This is one of my husband’s favorites!

Tip – I like to label my jars and keep them lined up at eye level in the fridge. Fun to “shop” and choose the one you want to eat. Also, helps others in your house easily see whats available.
