Coconut Kiwi Smoothie Bowl

With this heat wave all I have wanted to eat is smoothie bowls, so this Coconut Kiwi Smoothie Bowl is my latest creation. Full of good fats, so don’t worry, no sugar spikes and crashes here. Oh, and that gorgeous green color, its greens, but you would never know! This bowl is low sugar to start because of the fruits chosen, however, omit the lara bar if going for keto or just lower sugar as it has dates.

Coconut Kiwi Smoothie Bowl

Smoothie ingredients

1/3 cup frozen dark cherries

1/3 cup frozen pineapple

1/2 cup frozen cauliflower

1/2 frozen avocado

1 cup packed spinach

1 cup packed kale

2 inches cucumber

1 tbls coconut butter

1/2 cup coconut milk

1/2 lime juiced (zest for the top)

1 tsp spirulina

1 tsp cinnamon

Kombucha just to blend – I used GT’s Trilogy here but many of their flavors would rock!

Toppings

Chopped kiwi

Shredded coconut (unsweetened)

lara bar – kiwi lime, chopped

Lime zest

How To

Place ingredients in a smoothie blender cup in order as listed above, adding only enough Kombucha to get it to blend. Note, your smoothie will be thicker with the less liquid you add.

Pour in a bowl and top with kiwi, coconut, and lara bar (optional).

ENJOY!!
