Weekend Breakfast
Smoothies all week and then this, my lovely weekend breakfast feast! I love making this for the family as we all eat it. I opt out of the sweet potatoes most days as they have a high sugar content.
Ingredients:
Bacon
Eggs
Spinach
Tomatos
Red Cabbage
Sweet Poataoes
Coconut Oil
S&P
Garlic and Onion Powder
Lemon Juice
EVOO
Green Onions
First thing I do is cube my sweet potato and toss with coconut oil, S&P, garlic and onion powder.
Spread out on a cookie sheet and roast on 375 until crispy, 30-40ish mins.
Next I cook my bacon in an iron skillet and remove.
Slice up some red cabbage and give a quick toss in the hot bacon grease and remove to drain.
Season with S&P and squeeze of lemon.
Cook your egg in the bacon grease.
Pile your spinach on the plate and then the other ingredients.
Topping with EVOO, tomato slices and green onion.
