I can eat this rotisserie chicken kale salad anytime of day! I make it almost every week as it gets better the longer it hangs out in the fridge. I eat it cold and is a great travel food when placed in a mason jar.
Rotisserie Chicken Kale Salad
Buy an organic rotisserie chicken and pick.
Place in a large bowl and add tons of fresh raw kale. Top with my asian dressing and massage by hand until kale starts to break down a bit.
Add the chicken and any other additions you please! I love shredded cabbage, red onion, and celery. I tend to use the hardier veg as I make this salad to hang out for a few days and do not want things to get soggy.
Top with Raw pumpkin seeds, or a raw nut or a MIX!
