Oven Roasted Chicken
I love making this delicious oven roasted chicken about once a week and then use the carcass to make chicken broth that I can use in my other dishes throughout the week.
Ingredients:
1 free range organic Chicken ( I currently get from WF)
1-2 stalks Celery
2-4 cloves Garlic
Carrots (optional)
Onion
Lemon
Ghee
S&P
Fresh Rosemary
I make a paste with chopped garlic, rosemary, ghee and S&P. I separate the skin from the meat and slather the paste in between on both sides of the chicken. Reserve a tad for the outside.
I S&P the inside and stuff with lemon slices, onion,veg, rosemary and last of the garlic.
Last I smear the outside of the chicken with the last of the paste.
Next I place in my fridge uncovered overnight to dry out, it makes for a crispy crust.
Next day I take out and place in 375 oven for 45mins to 1 hr. When the top is beautifully brown that is when I take it out.
Usually the chicken never makes it to a dinner plate as we stand around eating straight from the oven fighting over the crispy skin!
Very beautiful juices in pan, do not throw any of the bones, veg or juices out, you can make a broth with these!
