Homemade Mayo

Homemade Mayo is super simple and fast to make, if you can eat eggs.  I must give my dad kudos for sharing this with me, thanks dad!

Ingredients:

2 Eggs

1 cup Extra Light Olive Oil (or EVOO but know it will be very olive oily tasting)

3 tsp Fresh Lemon Juice

Pinch Himilayan Salt

Use an immersion blender, add all ingredients and whip it up in 2 seconds. You now have your very own homemade mayo!

I like to store in little glass jars that look so cute.

You can flavor this with fresh herbs, garlic or peppers to kick it up a notch.

I use this mayo in my Pumped Up Tuna Salad!
